Back in the 80's, microgreens were introduced to the restaurant scene but have since become popular with health-conscious people. They are considered a baby vegetable plant and are harvested 7-20 days after the first leaves appear (not to be confused with ‘sprouts,’ which have a shorter growing cycle).
Microgreens can be grown from many types of seeds. They have intense aromatic flavours and a variety of colours and textures. Rich in vitamins, minerals, antioxidants, chlorophyll and fibre, they pack a higher nutritional punch than mature vegetables.
Eat microgreen stems and leaves raw, added to salads, wraps, burgers, blended into smoothies, juiced or used as a garnish.
